Only the members of your organisation who have been granted access — every access is checked on the server. On the server disk your data is encrypted: AES-256-GCM, with a separate key per organisation. A copied data folder alone is worthless.
Yes. The server backs up every organisation daily at 00:00 UTC, with a 7-day rotation; a restore keeps the previous state as its own point. A mirror server holds a second copy. To be honest: switching over to the mirror is done by a person, not by automation.
